If there’s very little in your fridge, but you can open a cupboard and find a can of each tuna and cannellini beans, add to that half an onion, it’s enough to make yourself a delicious and nutritious lunch.
It’s not only a favourite with all the family, but here with Italians too, and often found on menus.
Actually it was an Italian friend who showed me how to make it years ago.
It’s so easy,
Drain and rinse the cannellini beans and put into a bowl.
Drain the tuna and add to the beans.
Finely chop half an onion, add to the tuna and beans and gently mix together.
Add enough olive oil to make the mixture moist, but not too oily!
Season with a little salt and lots of pepper.
My lovely friend used to make three times that amount, and would then put it into a sealed jar (kilner type) and keep it in the fridge for up to a week.
It does taste even more delicious if made even a couple of hours before eating.
